From Beginner to Advanced, We Guide You Through the Complete Wing Chun System—A Path That Demands Dedication, Patience, and the Willingness to Cultivate Both Mind and Body.
Our System
We uphold a traditional and rigorous approach to teaching the complete Wing Chun system. Progress is not given - it is earned through patience, discipline, and proficiency at each stage of the journey. From Bootcamp to Siu Lim Tao, Chum Kiu, and Biu Gee - and further into the Wooden Dummy, Long Pole, and Knives - each level must be deeply understood before moving forward.
Our Sifu, Sung Choi, has inherited the full system, passed down from Grandmaster Ip Man to Grandmaster Samuel Kwok and Master Bryan Talbot. The true depth of Wing Chun lies not in memorizing forms, but in understanding their essence - every movement holds layers of application beyond what is seen. Forms are empty without comprehension; they must be brought to life through practical use.
The heart of Wing Chun thrives in sensitivity, structure, body mechanics, reflexes, and adaptability - all cultivated at a subconscious level. Sifu Sung Choi and Sifu Bryan Talbot have spent years deconstructing each movement, distilling the art into a structured and digestible syllabus, ensuring that students not only learn the forms but embody their function.
The journey is long, the training is demanding, but through dedication and understanding, the true spirit of Wing Chun reveals itself.

What Is Wing Chun?
Wing Chun is a martial art of efficiency, precision, and adaptability. Originally developed by Yim Wing Chun, a woman who sought self-reliance and skill over strength, it was later refined and passed down through generations, most notably by Grandmaster Ip Man.
What sets Wing Chun apart is its reliance on principle over power, structure over force. It is not brute strength that prevails, but timing, positioning, and adaptability. Practitioners learn to remain relaxed yet responsive, using redirection, turning, and economy of motion to neutralize threats without unnecessary resistance.
This art is not bound by gender, size, or physical strength—it is a system of biomechanics and awareness, teaching one to move with efficiency and stability, attacking and defending from any angle with effortless flow.
With patience, discipline, and an open mind, Wing Chun becomes more than self-defense—it is a path of self-mastery, revealing the deeper connection between body, mind, and movement.
At its core, Wing Chun is a system of principles rather than fixed techniques, allowing it to be highly adaptable in real-world scenarios. Its simplicity makes it effective in a short time, but its depth is profound and transformative, requiring a lifetime to truly master.
The Wing Chun system consists of:
- Three Open-Hand Forms – Siu Lim Tao, Chum Kiu, and Biu Gee
- Wooden Dummy Training – To refine structure, power, and efficiency
- Weapons Forms – The Long Pole and Butterfly Knives for advanced skill development
Wing Chun is not just a martial art - it is a path of self-mastery, offering a deeper understanding of movement, adaptability, and internal balance.

Siu Lim Tao: The Foundation of Wing Chun
Siu Lim Tao, or "Little Idea," is the first hand form in Wing Chun, laying the foundation for structure, energy control, and precision. Grandmaster Ip Man described it as a practice of emptying the mind from daily distractions, allowing full focus on refinement and efficiency.
The form is divided into three sections, each with a distinct purpose:
Fundamental Strength & Structure
Controlled Power & Fluidity
Precision & Muscle Memory
Mastery of Siu Lim Tao is essential - there are no shortcuts. Every movement is a lesson in patience, focus, and control, forming the root from which all Wing Chun skills grow.

Chum Kiu: Seeking the Bridge
Chum Kiu, the second form of Wing Chun, builds upon the foundation of Siu Lim Tao, introducing movement, power generation, and bridging - the ability to close distance and control an opponent.
The form emphasizes:
Turning & Body Shifting
Two-Way Energy
Footwork & Bridging
Kicks & Balanced Striking
Independent Hand Coordination
Through Chum Kiu, a practitioner moves from stillness to motion, from structure to application - learning to flow, adapt, and seek the bridge between self and opponent.

Biu Gee: The Final Hand Form – Power, Precision, and Recovery
Biu Gee (Thrusting/Darting Fingers), the third and final hand form of Wing Chun, is traditionally reserved for trusted and dedicated practitioners. It introduces advanced techniques, emergency escapes, and refined power generation, marking the completion of the Wing Chun system’s hand forms.
Because Biu Gee represents the highest level of Wing Chun’s hand forms, it should only be studied once Siu Lim Tao and Chum Kiu have been deeply understood and embodied. With mastery, a practitioner can deliver unmatched precision, adaptability, and explosive power, even from the most challenging positions.
